Cuinant Drets: Mescladís' program for self-employment in the hospitality industry.
Free training from Mescladís to help you make the leap into the hospitality industry: mentoring and support for entering the workforce or starting your own business. Registration is now open
You’ve been working in the kitchen or front of house for years. You know the pace of a service, you understand what it means to work as a team, and you’ve learned this trade day by day, facing real-world situations. And now you’re asking yourself: What can I do with this experience? How can I take it to the next level? How can I learn to manage a team, improve a restaurant’s organization, understand the numbers behind a business, or even design my own project?
Cuinant Drets is Mescladís’ training program for entrepreneurs, designed for people with prior experience in the industry who want to take their careers to the next level: either by taking on more responsibility within a team or by launching their own culinary venture. Registration is now open, and the course begins on September 14, 2026.
Having experience in the kitchen or front of house isn’t always enough to take the next step. Often, the other side of the trade is missing: knowing how to do calculations, organize a service, read an income and expense statement, or have a thorough understanding of the hospitality industry’s collective bargaining agreement. That’s exactly the leap we help you make at Cuinant Drets, with our sights set on a specific goal: skilled employment or self-employment.
What You'll Learn
The program combines management, operations, and labor rights so that each participant can function with ease both as part of a team and when leading their own project:
- Cost calculation and pricing (cost breakdowns, food cost).
- Kitchen and Service Organization.
- Menu design.
- Revenue and expense management, financial viability.
- Digital tools and management software.
- How to Turn an Idea into a Viable and Sustainable Project: The Business Plan.
- Labor rights, the hospitality industry collective bargaining agreement, and team management.
Learning by doing, in a real-world setting
Over the course of 12 weeks, each group creates and manages a culinary project—a micro-entrepreneurship lab. The training takes place in a real-world work environment, the Mescladís Lliure Montjuïc, which allows participants to put each idea into practice and evaluate it—from the technical specifications to the finished product—from day one, rather than just on paper.
Support doesn't end in the classroom
Two elements set Cuinant Drets apart from typical technical training programs. On the one hand, there are individual mentoring sessions with industry professionals, which help each student define their own goals and plan their next steps. On the other hand, there is ongoing support after entering the workforce: Mescladís assists with the search for employment or self-employment once the training is complete, whether that means finding a position that offers professional growth within a company or providing guidance on developing a student’s own project.
