La Meva Recepta de Lola - A gastronomic trip to Argentina

As part of our Cuinant Oportunitats program, we celebrate a very special day: La Meva Recepta de Lola. A workshop where memory, migration and cooking are intertwined to tell stories through flavors.

On this occasion, Lola, originally from Argentina, became the head chef to share with her colleagues a dish that evokes the tradition and memories of her homeland: Entraña a la fugazzeta with rosti potatoes.

"The asado in Argentina is therapy for us. It's talking about laughter, it's unloading, it's complaining... and, well, it's that ritual that builds the fire, the asado, the friends, the family."

With a spirit full of nostalgia and a deep sense of community, Lola explained step by step the preparation of her recipe, intertwining culinary technique with anecdotes of her family, those moments shared around the fire and the connection that is created through food.

"In Barcelona, this course has given me the possibility to meet fantastic, magnificent people... I am happy to share with you. For me you are my friends and today I want to share this dish with my friends as if it were in Argentina."

A dish with history

Entraña a la fugazzeta with rosti potatoes is not just a dish; it is a celebration of roots, bonds and community. This week, you can find it on Borrell's weekly menu, as part of Cuinant Oportunitats ' initiatives to make visible and celebrate the talent of our students.

Accompanied by a classic chimichurri, each bite invites you to savor not only ingredients, but also stories and memory.

"I would like you to enjoy it... with this new stage that we are going to start now... The food sometimes also makes us family. And I think several times I felt like family here."

With tears in her eyes and a sincere smile, Lola closed her Meva Recepta with a special thank you:

"I thank the whole Mescladís team... I don't want to cry, but I thank them a lot."

The day culminated with a warm embrace from Ester, Borrell's trainer and chef, and the colleagues shouting with laughter and applause:

"We love you, Lola!"

Through our training program Cuinant Oportunitats, we offer people in vulnerable situations a space where they can learn culinary techniques, discover new cultures and share their stories through the dishes they prepare.
